Noma Kyoto is a collaboration between noma and Atelier Ace. This residency has been made possible by our longstanding partner NTT Urban Development Corporation. We would also like to thank the City of Kyoto for their continued support of Ace Hotel Kyoto and our creative and cultural ventures.
Noma’s René Redzepi was first invited to Kyoto 15 years ago by another legendary chef, Yoshihiro Murata, the seven-Michelin-starred ambassador for modern Japanese cuisine. It ignited a love affair with the city’s food culture that culminated last spring, when Redzepi and his team, working with local culinary custodians, launched a two-month residency at Ace Hotel Kyoto. This fall, they’ll reignite the flame, returning for round two with a menu that captures the harvest season’s natural poetry.
They’ll take the reins of Ace Kyoto’s main restaurant from October 8 through December 18, with seatings offered Monday through Thursday. As always, the meal will embody noma’s locavore philosophy, highlighting foraged, farmed and fermented ingredients found in Japan.
“Our first stay in Kyoto was one of the most unforgettable times we’ve ever had as a team, and we cannot wait to return this fall to keep learning, to see our friends again, and to experience everything autumn has to offer. We’re so happy to continue building our relationship with Ace Hotel Kyoto and the team that made us feel at home.”
— René Redzepi, chef and owner of noma
