NSW-born Clugston, who has worked under Gordon Ramsay and served as R&D chef at Noma, is showcasing his deep fascination with native Australian ingredients at this exclusive event. Guests will be welcomed with a bespoke cocktail before indulging in a vibrant lineup of inventive dishes that reflect Kiln’s bold, boundary-pushing spirit—think kingfish tart with lemon myrtle, kangaroo tartare with emulsified mussels, and a show-stopping dessert by celebrated pastry chef Andy Bowdy.
